Hazelnuts Basbosa Recipe

ngredients

For sugar syrup

2 cup sugar
1 cup water
1 tablespoon lemon juice
1 cinnamon stick
2 whole cloves

For the Basbosa

3 cup fine semolina flour
1½ cup sugar
2 teaspoon baking powder
4 tablespoon ghee or melted butter
1½ cup yogurt
½ cup coconut (optional)
1 tablespoon tahini past (sesame seed past)
½ cup chopped hazelnuts (optional)
½ cup chopped almond (optional)

Method


For the syrup

- Place sugar and water in a saucepan over medium heat till boiling.
- Add the rest of the ingredients (you can add vanilla or rose water optional).
- Leave it in the oven for 10 minutes or until it is ready, make sure to use it warm.

For the Basbosa

- Mix together flour, sugar, and baking powder in a large bowl.
- Add the melted butter, rub with finger tips till crumbly.
- Add the yogurt and mix it well until you get soft dough.
- You can add coconut to the dough.
- Coat a baking pan with tahini.
- Spread dough evenly on the prepared pan.
- Bake in a preheated oven to 175˚C for 15 minutes.
- Sprinkle nuts over the soft dough while pressing on the surface.
- Place in the oven for about 20 minutes or until golden.
- Pour syrup over the hot Basbosa.
- Return to the oven for 5 minutes, let cool at room temperature.
- Serve with whipped cream.

Steak sandwich recipe - How to make Steak sandwich

Ingredients (serves 4)

1 large brown onion, halved, sliced
2 tablespoons olive oil
1/3 cup whole-egg mayonnaise
1 garlic clove, crushed
4 (150g each) beef rump steaks
1 Turkish bread loaf
80g baby rocket
2 tomatoes, sliced

Method

Preheat a barbecue plate and grill or a chargrill pan on medium heat. Place onion and 1 tablespoon of oil in a bowl. Toss to combine. Add onion to barbecue plate. Cook, stirring, for 5 to 6 minutes or until softened and light golden. Remove to a plate and cover to keep warm.

Meanwhile, combine mayonnaise and garlic in a small bowl. Set aside.

Brush steaks with remaining oil and season with salt and pepper. Grill for 2 minutes on each side for medium or until cooked to your liking. Remove to a plate and cover to keep warm.

Cut bread crossways into 4 pieces. Cut pieces in half lengthways. Grill both sides of bread for 30 seconds to 1 minute or until toasted. Spread garlic mayonnaise over toasted sides of bread. Top bread bases with rocket, tomato, steak, onion and bread tops. Serve.

Turkish delight truffles recipe

Makes 24

Ingredients

1/4 cup thickened cream
400g dark chocolate, chopped
2 x 55g chocolate-coated Turkish delight bars, finely chopped
50g white chocolate, chopped

Method

Combine cream and half the dark chocolate in a heatproof, microwave-safe bowl. Microwave, uncovered, on medium (50%) for 2 to 3 minutes, stirring every minute with a metal spoon, or until smooth. Cool for 15 minutes. Stir in Turkish delight. Cover. Refrigerate for 3 to 4 hours or until firm.

Line a tray with baking paper. Roll heaped teaspoons of Turkish delight mixture into balls. Place on prepared tray. Refrigerate for 1 hour.

Place remaining dark chocolate in a heatproof, microwave-safe bowl. Microwave, uncovered, on medium (50%), stirring every minute with a metal spoon, for 2 to 3 minutes or until smooth. Using a fork, dip truffles in melted chocolate, shaking off excess. Return to tray. Refrigerate until firm.

Place white chocolate in a heatproof, microwave-safe bowl. Microwave, uncovered, on medium (50%) for 1 minute, stirring after 30 seconds with a metal spoon, or until melted and smooth. Spoon chocolate into a snap-lock bag. Snip off one corner. Pipe chocolate over truffles. Refrigerate until set. Serve.

Preparation Time 30 minutes
Cooking Time 15 minutes
Makes 4

Ingredients

2 sheets frozen ready-rolled shortcrust pastry, partially thawed
200g dark chocolate, chopped
1/2 cup light thickened cream
2 x 55g Turkish Delight chocolate bars, cut into 1cm-thick slices
1/3 cup flaked almonds, toasted

Method

Preheat oven to 200°C/180°C fan-forced. Grease four 2cm-deep, 12cm (base) round fluted flan tins. Cut each pastry sheet in half diagonally to make 4 triangles. Line base and side of each tin with 1 piece of pastry. Trim edges. Place on a baking tray. Refrigerate for 20 minutes.

Bake pastry for 12 to 15 minutes or until golden. Cool for 5 minutes.

Meanwhile, place chocolate and cream in a microwave-safe bowl. Microwave on high (100%) for 1 minute or until smooth, stirring with a metal spoon halfway during cooking. Arrange Turkish Delight over base of tarts. Top with chocolate mixture, then almonds. Refrigerate for 2 hours or until firm. Serve.

Notes

Variation: Use chopped Bounty chocolate bars instead of Turkish Delight.

Storage tip: Pastry cases can be made up to 3 days ahead. Store in an airtight container until needed.
